Black Bean Brownies

Alright, so I know what you’re thinking.

“Beans? Healthy dessert? Now why would I want to eat a ‘healthy’ brownie when I can have rich, decadent, fudgy, chocolaty brownie instead?” 

But what if the rich, decadent, fudgy, chocolaty brownie is the healthy brownie?

Yes, it’s possible! This is a healthy dessert but it DOES NOT taste healthy. And if I didn’t tell you, you would NEVER guess that the main ingredient is protein and fibre rich black beans! These brownies are completely gluten-free, flour-free and made with whole food ingredients. They are loaded with protein and fibre, unlike your “regular” refined flour and sugar brownies. I’ve tested these healthy brownies on three of my brownie loving friends and they loved them! Plus they had NO IDEA they were eating beans. And they asked for more and the recipe. So here it is :) Enjoy!

 

Ingredients:

(gluten-free, flour-free, dairy-free and vegan)

1 1/2 cups black beans (soaked, cooked, drained and well rinsed)

2 tbsp fair trade raw cocoa powder (or more!)

1/2 cup Gluten-Free Certifed whole oats (or quinoa flakes)

1/4 tsp unrefined sea salt

1/3 cup + 2 tbsp pure maple syrup (or raw honey)

1/4 cup virgin coconut oil

1 free-range egg (optional)

2 tsp pure vanilla extract

1/2 tsp baking powder (aluminum free)

1/2 cup dark chocolate chips

Tip: To increase the digestibility of your brownies and to avoid gas and bloating, soak your beans for 12 hours (more or less) before cooking them. This gets rid of the anti-nutrients (phytic acid) and it deactivates the enzyme-inhibitors to bring your beans to life again!

 

Directions:         

Preheat oven to 350 F. Combine all ingredients except chocolate chips in a good food processor (or high powered blender a.k.a Vitamix), and blend until completely very smooth. Stir in the chips, then pour into a greased 8×8 pan. Cook 15-20 minutes, then let cool at least 10 minutes before trying to cut. Makes 9-12 brownies. Serve warm or cooled (I prefer these straight out of the refrigerator).
