Carrot Cake Protein Bars

Eating clean doesn't have to be unappetizing. These delicious yet healthy and natural protein bars supply your muscles with an abundance of nutrients that you need for recovery after a good training session, including approximately 10-12g of protein per serving (two squares).


Makes 16 square protein bars.

1 cup Gluten-Free Certified oat flour (whole oats ground up in a Vitamix)

4 scoops natural brown rice protein powder (I like Sunwarrior)

2 tsp ground cinnamon

½ tsp ground ginger

½ tsp ground nutmeg

½ tsp ground cloves

1/2 tsp baking soda (aluminum free)

1/4 tsp Himalayan salt (or sea salt)

4 whole organic, free-range eggs

1/2 cup non-GMO coconut flour sugar (or maple sugar)*

1 cup carrot puree (steam 3 large carrots in 4 oz of water and blend until smooth)

*If you have a sweet tooth you can add a bit more sugar, and if you prefer your protein bars with less sweetness, you can remove some of the sugar or use a natural sugar alternative such as Stevia (about 4-6 packets).



Preheat oven to 350 degrees.  Mix flour, protein, spices, baking soda and Himalayan salt.  Mix eggs, sugar, carrot puree and water (optional) in a bowl.  Add wet ingredients to dry ingredients and mix together.  Coat a glass pyrex dish with real butter to prevent sticking.  Pour ingredients into dish.  Bake 20-30 minutes.
