Chewy Oatmeal Goji Cookies

These superfood cookies are rich in antioxidants and a good source of protein.  They’re very moist with a great flavor!

Ingredients:

3 cups of whole, organic oats

½ cup spelt flour

½ cup of raw, unprocessed cane sugar (Sucanat)

1/4 cup virgin coconut oil

 1 cup vanilla almond milk (or purified water)

2 organic, free-range eggs (vegans replace with 2 tablespoons wet, ground flaxseed)

1 tsp natural vanilla extract

1 tsp baking soda (aluminum free)

1 tsp unrefined sea salt

1 ½ tsp ground cinnamon

½ cup goji berries

½ cup sun dried raisins (optional)

½ cup tree nut of choice (I like walnuts or pecans!)

Directions:

In a medium bowl, cream together coconut oil and cane sugar mixture. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, sea salt, and cinnamon; stir into the creamed mixture. Mix in oats.  Add goji berries, raisins and nuts. Cover, and chill dough for 30 minutes to an hour.  Preheat the oven to 350 degrees F. Grease cookie sheets with coconut oil. Roll the dough into small balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in cane sugar (optional).  Bake for 15 to 25 minutes, or until the top of the cookies is golden brown. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
