Homemade Spelt Tortilla Wraps

Good, whole grain tortillas are a thing of beauty. Once you know the taste of fresh handmade tortillas, you’ll never want to go back to the grocery store variety. Before I started making them myself, it was always a hassle finding good, whole grain tortilla wraps that weren’t full of preservatives, stabilizers and mold inhibitors.  Now you can make the best of the best! Your own whole ingredient, fresh and warm natural wraps! Making them is as simple as mix, roll, heat and eat! Yum!


2 cups spelt flour (can be sprouted or not)

1/2 tsp. sea salt

1/2 tsp. baking powder (aluminum free)

2 tbsp. virgin coconut oil or extra virgin olive oil

3/4 cup hot water



Mix together the flour, baking powder and sea salt in large bowl. Add water slowly, mixing with your hands to make a soft dough. Rub in some oil. You may not need all the water. Knead a few minutes on floured surface until smooth and elastic. Lubricate top with oil, put back in bowl and let rest, covered for 10 minutes.

Divide into small golf size balls and proceed to roll out (use a rolling pin) into size and thickness you prefer. On low to medium heat, cook in a large, dry frying pan for a few minutes, or until top is slightly bubbly, then turn on opposite side for a minute or two. Keep stacked and warm inside a clean tea towel. Ready! Serve warm. Add your favorite vegetables, leafy greens, bean spread or other filling, wrap it up and enjoy!

TIP: To make tortilla CHIPS, simply cut the finished wraps in small triangles and toast them. They are fantastic with Good-For-You Homemade Salsa
