Nut Butter Banana Muffins

These Nut Butter Banana Muffins are the perfect snack or breakfast side. They are high in protein and healthy fat. The entire family will enjoy them!


1 1/2 cup spelt flour

½ cup old fashion oats

1/3 cup virgin coconut oil (or real butter, softened)

1 1/2 tsp baking soda

1/2 tsp unrefined sea salt

1/2 cup coconut palm sugar (or raw cane sugar)*

4 ripe bananas, mashed

1 egg

1/4 cup almond milk

1 tsp vanilla extract

3/4 cup organic natural almond or peanut butter

* Reduce sugar content by half for young toddlers


Pre-heat oven to 350 degrees F. Grease a muffin tin using coconut oil or butter, or use paper liners. In a large bowl, mix spelt flour, oats, sea salt & baking soda. In a separate bowl, mix bananas, sugar, egg, coconut oil, almond/peanut butter, almond milk and vanilla together. Add the wet ingredients to the dry ingredients and mix well. Spoon the mixture into the muffin tin. Bake for 30 minutes.
