Pineapple Coconut Energy Bars

Taste the tropics!  These bars are perfect to grab in the morning when you’re in a rush.  Start your day with Mother Nature’s delicious, tropical treats!  They’ll leave you ready to take on the day.


½ cup ground almonds

1 cup rolled oats

½ cup quinoa flakes

½ cup shredded coconut

½ tsp baking soda (aluminum free)

1/3 cup extra virgin coconut oil

2 heaping tbsp raw honey

1/3 cup coconut water mixed w/ 3 heaping tbsp ground flaxseed (egg substitute)

1 cup crushed pineapple (fresh if possible)

2 tbsp raw sunflower seeds (or pumpkin seeds)


Preheat oven to 350 degrees F. Rub coconut oil on bottom of 8x8” baking tray.  In a bowl, mix ground almonds, rolled oats, quinoa flakes, shredded coconut & baking soda. Mix in coconut oil & honey.  Set aside 1/3 of the crumby dough for topping of bars.  With remaining 2/3, mix in coconut  water and flaxseed mixture.  Press dough into greased baking dish and pour pineapple mixture on top.  Sprinkle the remaining 1/3 of crumby dough over pineapple filling.  Sprinkle sunflower seeds to finish!  Bake 15-20 min until bars golden brown.  Cut bars in desired size. Let cool. Store in fridge in airtight container. Enjoy!
