Dark Chocolate Chip Spelt Cookies

Who doesn’t love chocolate chip cookies? This recipe is a nice and healthy twist on your typical cookie recipe. These dark chocolate chip spelt cookies make the perfect little treat when dipped in vanilla almond milk!

 

Ingredients:

Total Prep Time: 20 minutes | Yield: Approximately a dozen cookies

½ cup virgin coconut oil, softened (or real butter)

¾ cup unrefined cane sugar

1 whole, free-range egg

1 tsp. natural vanilla extract

1 tsp. baking powder (aluminum free)

1 ¾ cup spelt flour

½ tsp. Himalayan sea salt

½ cup dark, organic chocolate chips

 

Directions:

Preheat oven to 350 degrees F. In large mixing bowl, beat coconut oil with sugar, egg, and vanilla extract. Blend in flour, baking powder and salt. Stir well. Fold in chocolate chips. Drop on greased baking sheet by the teaspoon and bake for 10-12 minutes, or until golden brown. ENJOY!
