Homemade Coconut Cream Pie Larabars

Larabars are perfect as a quick snack on the go or after a workout. They are great for the entire family, and especially for toddlers and kids. Made with simple and nourishing ingredients, these raw bars are easy to make and keep very well for weeks or even months! Dates are a high energy food, nuts add protein and the coconut meat and oil are a source of healthy essential fatty acids that are great for the brain, and growing children.
Ingredients:
1/2 cup raw almonds
1/2 cup raw cashews
1/2 cup fresh organic coconut meat (or dried/frozen unsweetened coconut flakes)
16 large dates – pitted and roughly chopped (soak if they are very dry)
3-4 teaspoon extra virgin coconut oil
Directions:
Put raw almonds and cashews in a food processor and pulse until they are roughly chopped, continue processing until finely chopped. Add the coconut, pulse and then process until fine. Add the dates and continue processing for approximately a minute and finish by adding the coconut oil and process until the mixture clumps together (1-2 minutes).
Spread the mixture on a big pan and cut into bars. You can simply wrap each bar in parchment paper, or store them in a sealed glass container. It is not necessary, but I like putting my bars in the dehydrator for a few hours, as they keep longer, and aren’t as messy to bring as a snack on the go for my 1 year old. These bars do not really need refrigeration but you can certainly freeze them if you choose to make a larger quantity to have on hand. Enjoy!
