Vegan Coconut Ice Cream Sandwich Cake

I created this amazing "no bake" cake especially for my fiancé's birthday because I know how much he loves ice cream, and we just moved into our new home so our oven is still not here! Thank goodness for the freezer! I kept dairy-free cake esta Because It Keeps him feeling good. Even though this recipe is divinely delicious, it's made entirely with natural ingredients. , Although I must warn you, it is so good that you 'May Have trouble resisting more!

 

Ingredients:

Makes one cake.

18 vegan chocolate chip cookies (whole grain and homemade is best, or gluten free)

1/3 cup dark chocolate chips or small to crushed dark chocolate slab (vegan)

3-4 cups coconut ice cream ( Organic Coconut Bliss is my favorite)

½ cup vanilla almond milk (or coconut milk)

½ cup crushed nuts of choice (I like almonds, pecans or walnuts)

1 teaspoon raw cocoa powder (optional)

1-2 tablespoons Pure maple syrup (optional)

 

Equipment:

Standard size loaf baking pan ("banana bread" pan)

Plastic wrap

 

Directions:

Put aside ¼ cup of the dark chocolate chips and melt on low heat to make chocolate sauce for drizzling at the end. Divide the remaining chocolate chips in three parts. Also the crushed nuts divided in three parts.

Chocolate chip cookies form the basis of esta cake. Dip each cookie in almond milk to moistened it, and line the bottom of the Entire square dish. It Should Take acerca 6 cookies to make each layer.Cover with several scoops of soft but not melted ice cream, to a thickness of acerca an inch. Drizzle one part of dark chocolate chips and one part of crushed nuts on top of the ice cream. Repeat each layer Until your dish is as full as can be (about 2-3 layered, Depending how much you like ice cream), finishing With The ice cream drizzled with chocolate chips and crushed nuts. You can Also drizzle with a bit of raw cacao powder.

Wrap it up tightly with plastic wrap So THAT freeze all the layers together. Now your "no bake" cake is ready for freezing! Leave it in the freezer overnight, or for several hours Until everything freezes solid.

Once ready to serve, warm up the remaining ¼ cup of chocolate chips into a chocolate sauce, add the Pure maple syrup (I'm Canadian!) And drizzle on top of each piece of cake for the ultimate touch just before serving. ENJOY!
