Vegan Two Bite Brownies

Some days we just need a little bit of comfort food. These will hit the spot, with an oh-so healthy touch! Who can resist a fresh batch of warm and moist brownies? Mmmm vegan brownies! Great for people with egg or dairy allergies too! These brownies are wonderful served with coconut ice cream or a drizzle of pure maple syrup. Make them with love and enjoy them with some company, guilt free.

Ingredients:

2 cups organic spelt flour (or organic whole wheat flour)

1 cup raw cane sugar

3/4 cup organic fair trade cocoa powder

1 teaspoon baking powder (aluminum free)

1 teaspoon unrefined sea salt

1 cup purified water

½ cup almond milk (or ½ purified water)

3 tablespoons virgin coconut oil

1 teaspoon natural vanilla extract

½ cup fair trade dark chocolate chunks (optional)

Directions:

Preheat the oven to 350 degrees F (175 degrees C). In a large bowl, stir together all dry ingredients. Pour in wet ingredients; mix until well blended. Spread evenly in a 24 cup mini muffin baking pan. Bake for 15-20 minutes in the preheated oven, or until the tops of the brownies are no longer shiny. Let cool for at least 10 minutes before popping out your two bite brownies. ENJOY!
